I surprise myself sometimes. With the creation of this quinoa salad came the apex of my efforts to be healthy, and healthy it was. Literally every ingredient in the dish was green, with the exception of South America’s power grain. It’s just quinoa, cucumber, avocado, thyme, lime, salt , and pepper. I ate this in the late morning, and the salad left me chock full of energy until dinnertime. Who knew a salad could have such capabilities? I’d call this lunch a clear victory.
Quinoa is extremely versatile. Use it as a side or make it the main attraction. Mix in vegetables, meats, cheese, and even fruit would work. This grain even serves as a great leftover food, even though there will never be any leftovers when you make it. The great thing about quinoa is that there are no wrong answers.
