I surprise myself sometimes. With the creation of this quinoa salad came the apex of my efforts to be healthy, and healthy it was. Literally every ingredient in the dish was green, with the exception of South America’s power grain. It’s just quinoa, cucumber, avocado, thyme, lime, salt , and pepper. I ate this in the late morning, and the salad left me chock full of energy until dinnertime. Who knew a salad could have such capabilities? I’d call this lunch a clear victory. Quinoa is extremely versatile. Use it as a side or make it the main attraction. Mix in vegetables, meats, cheese, and even fruit would work. Is there anything better? Right off the bat, you can see each ingredient in this simple salad. And the opportunity for leeway has never been greater. Change up the vegetables and the seasonings, switch the gorgonzola with feta perhaps, while keeping the head of lettuce as the focal point. Add any vinaigrette of your choice, and enjoy. Nothing more to it. Feeling good about what you put in your stomach can make all the difference. It can make a bad day good, or a good day great. The secret to this Squeaky Robot: eat well, live well.

Breaking Down Detox

I’d started 2011 with the intention of eating healthier, i.e cutting out processed foods. It went well for a while; I was at home, and cooking in a big, light kitchen made the process fun and enjoyable. This simple salad was one of the first on the new menu. Inspired by my cousin, who served us spinach doused in red wine vinegar and olive oil, covered in fried and baked shallots, it was the easiest, lightest, and most delicious starter I’d ever had. I made a new version of it at home, the exact same thing but with the addition of cubed grapefruit. I’m a firm believer that grapefruit makes everything better, and that philosophy totally worked in this instance. Many people become discouraged…
